Leopold Gourmel has a clear and logical vision. Aromatic wines should, first, be elaborated from matured grapes, full of fresh and fruity flavours. The original vineyard in the heart of ”Premier Crus Fins Bois” and the ones further selected by Leopold Gourmel excel in this respect. Carefully vinified on the lees, the wines are distilled so as to respect their origin in the vineyard. Each year different, the distillation always extracts and concentrates a pure fresh, simple spirit with the highest possible aromatic expression. Aged in oak cask with a fine grain, never blending vintages or vineyards, Leopold Gourmel cognacs slowly evolved along a natural aromatic path, through 5 typical stages.
